Moderno
In Italy, “Caffé Moderno” or “Cinema Moderno” flourished everywhere around the time of World War II to ardently embody the unconditional faith in the century of progress. However, as soon as the adjective “moderno” (modern) is uttered and associated with something, the idea of modernity gently and magically tips into the outdated.
It is precisely towards this set of impulses (from the past, in the present and towards the future) that we are oriented.
Francesca
Francesca is originally from Taranto, in Puglia, studied in Modena (central Italy), then lived in Turin for 13 years, before settling in Paris in 2015. Her cuisine, which some of you may have discovered at the Comptoir on rue Villiers de L’Isle Adam (2015-2024), reflects this geographical ascent and melting pot.
From Puglia, Moderno has absorbed the primary elements and colors: the sun and saltiness, the culture of seafood, crisp fruits and land ingredients such as capocollo, always on the menu. From Emilia-Romagna, Moderno’s cuisine borrows generosity and taste, as well as an essential ingredient: pasta. From Turin and Piedmont, Moderno extracts its purest distillate, the flavor of Sunday mornings with tramezzini at café counters, the bitter, the sour, the sweet with a hint of alcohol, the boldness of mixtures.
Finally, Paris represents the surprise of discoveries, experimentation, offal and seafood, bold flavors and combinations, monkfish foie gras (naturally prepared, without cruelty to the animal), bistronomic culture, biodynamic and natural wine, fresh reds in summer and Pinot Meunier bubbles all year round.
.Moderno’s menu is short with fresh ingredients that vary daily, tracing this path in the present, towards the future, with a glance at the past.
